I am a confessed soup addict. It doesn’t matter what time of year it is or what the weather is like. If there’s a good vegan soup option, I am all over it. I love all kinds of soups, but there’s something extra soothing about vegan broth soups. Whether I’ve been eating too much junk or am feeling under the weather, this type of brothy, nourishing soup just screams comfort to me.
Choosing a Vegan Broth
Since the broth is the star in soups like this, it’s important to start with a flavorful broth. There are tons of vegan broth options, and these are a few of my faves (These brands haven’t compensated me in any way – they’re just the ones I use at home.):

You make the broth for this vegan phở recipe from scratch, and the payoff is a rich broth that’s packed with flavor. Even with the from-scratch vegan broth, this soup only takes 40 minutes to make!

17. Soothing Vegan Potsticker Soup
This quick and easy soup uses frozen vegan potstickers to save a lot of kitchen time. Cadry recommends Trader Joe’s Thai Vegetable Gyoza, which are super delicious and affordable. If you don’t have a Trader Joe’s near you, you can often find vegan potstickers at health food stores or at Asian markets. Even some regular grocery stores will stock vegan potstickers or dumplings – just look out for eggs, shrimp paste and fish paste in the ingredients.
18. Sopa de Fideo
The from-scratch tomato broth for this classic Mexican noodle soup uses fresh tomatoes, not canned. It’s total comfort food, and you only need six ingredients and about half an hour to make it!
